BIO ENERGY 

AN ALTERNATIVE TO NORMAL YEAST

Bio Energy  has been formulated for persons who have an intolerance to normal yeasted products and require a  chemical free diet. It can be used with ALL ABOUT BREAD Premium White Bread Flour and will make an excellent loaf.

Bio Energy can also be used with Bio Dynamic White Bread Flour and also with white Spelt Flour with good results for loaves of good texture, flavour and crust.

People who may benefit from using Bio Energy include those who have asthma, eczema, candida, psoriasis, chronic fatigue syndrome and other conditions.

Bio Energy used with Organic Flours enables the avoidance of chemicals and may suit the needs of those with an intolerance of both yeast and the chemicals used in the normal manner of growing wheat.

The use of Bio Energy with Spelt Flour may suit the needs of those who display an intolerance to both normal yeast and also normal wheat. We do not recommend Bio Energy for use with wholemeal or rye flours due to the more limited volume of those loaves. It may however be used successfully by substituting 10% of rye, atta or wholemeal flour for white bread flour.

Loaves using Bio Energy as a rising agent will be slightly lower in volume than those made with a normal yeast however the loaves are well within the range considered acceptable.

Bio Energy is not recommended for use with bread-mixes (as distinct from bread flours) where it will give a slightly salty taste, although it can be used successfully with ALL ABOUT BREAD Dinkel/Rye bread-mix.

Follow directions on the container – oil can be added if desired

Use as follows:

265ml water  (285ml if Panasonic Machine) Add extra 40 ml water if using Kamut Flour.

1 tablespoon oil. (Preferably cold pressed oil)

1 teaspoon of All About Bread natural Improver

30g (2 tablespoons) Bio Energy

Set on either Rapid or Basic Bake programmes
